Spaghetti Soup



It's finally starting to cool off here so I am getting into the soup mood!
Over the weekend I made this Spaghetti soup and it was AMAZING!!!!
I made enough that we had it 2 days in a row and we still wanted more!  This is definitely a keeper recipe!
 
 
Spaghetti Soup
 
Meatballs (you can use store bought or make your own! They are not hard to make.)
1 24oz jar of spaghetti sauce
5 c. water
2 beef bullion cubes
Dash of Italian seasoning
Salt & Pepper to taste
Spaghetti noodles
Parmesan Cheese
 
Combine the water, bullion, and spaghetti sauce in a pot.  Stir in seasonings and salt and pepper.  Bring to a boil then reduce heat to low and simmer while you make or heat up your meatballs.
Next, take your noodles and break into small bite size pieces and drop in the soup.  Heat until noodles are tender.  Then add meatballs.  (Taste your broth as you go you may want to add more water depending on your families tastes and evaporation.)
Then serve!  You can garnish with parmesan cheese.

Truck Rally

Last weekend we went to a truck rally with some of Michael's friends that were up visiting from LA!
It was a lot of fun!  We both had never been to one before and we really enjoyed it!
The first night they had a truck pull and then on Sat. they had drag racing which was pretty cool...
 
 
 


 
They had a specialty one there called the Batmobile!

 
These two were the funest to watch!  they were sooooo fast!  The one on the right hit 240 mph!!!!




 
They even raced some semis!  It was fun to see but they were a lot slower than the trucks!  ;)

Rock Climbing...

This weekend we went rock climbing with some friends for Michael's Birthday.
He had never gone and has been wanting to for awhile so I decided to surprise him and he LOVED it and of course was awesome at it! ;)
 
 
The lighting in there was weird so the pictures are a little blurry...
But my husband's so fast the camera can't catch him anyway!  ;)


 
There was a 100 ft. wall there that Michael climbed as well that he went up so fast I could barely keep up with keeping his rope tight!


 
Michael's limbs are so long that he could easily reach the next 'rock'.  But mine are so short that I had to almost do the splits and REALLY stretch to reach next knob.


 
It was a really fun day.  :)

My Man's Birthday...

Monday was My Man's 24th Birthday!  :D
I am soooooo blessed in the Man God has given me to!  He is the most AMAZING husband EVER!!!  I love him soooo MUCH!
 
 
I made some cupcakes to bring to class during coffee break.
This is how you spell 'Happy Birthday Michael' phonetically by the way.  (He is a phonetics teacher for those of you that don't know.)

 
Then that night we had some friends over for dinner.  I forgot to take pictures when it was light out but we enjoyed lighting our mason jar lamps.  :)


 
We had chicken fajitas (his favorite) and tacos.

Backyard Entertainment...

 
When I first came down here last year it was my first exposure to Jack Rabbits.
They are soooo BIG compared to the little cottontails I'm used to!





 
I love the lizards that run around here!  We didn't have any in IL.

Backyard...

Hello all!  Hope you had a great weekend!
This summer we have been working on making our backyard ... "homey".
I started with a little flower bed off the side of our back steps and it just grew from there.  :)
This is looking out our kitchen door.  We have the best house on campus as far as backyards go.  We are the only one that doesn't have another house on both sides.  It's really nice.  :)
 

 
Here is my little flower bed... It's starting to dry up so it's not quite as lush and colorful as it was earlier this summer.  But it's so nice to have some 'COLOR' to look at!  :)  The butterflies and hummingbirds love it! 

 
This is my herb garden!  I have ALWAYS wanted one but this is my first and I LOVE it!  I have Oregano, Parsley, Mint, Peppermint, Dill, Chives, and Basil.  It's so nice to have fresh herbs to cook with!

 
And here is my cute little veggie garden.  Didn't get a spring one in because we weren't sure if we were going to stay on campus or not but since we are, I decided to try a Fall one since it stays warmer so much longer here.  So far everything is thriving except for the peppers and tomatoes.  I also have squash, green beans, okra, and cucumbers.

 
We have this cool 'ring' of trees that we are making into an 'entertaining' area.  Our house is REALLY small and doesn't have a lot of room to host guests, so we decided to develop this space outside for that!  We have a fire pit and grill out there and we are also wanting to put a table and benches as well.


 
To add a little extra lighting I made these mason jar lamps that we hung from the trees.  They were supper cheap and easy to make and they give off such a romantic light when they are lit.  ;)

Hummingbirds...

This spring I planted some Zenias out our backdoor just to help add some color to the dry TX landscape.  They THRIVED even in the TX heat and dryness! 
One morning I was out on our back porch with my coffee and chocolate chips doing my devotion when all of a sudden a hummingbird flew over my flower bed!  I was sooooo excited!  She started being a daily regular at our house and I wanted to keep her coming even after the flowers went away so My Man said we could get some hummingbird feeders!  We did and soon we had 5 zipping around our backyard.  :)  They are soooo fun to watch but VERY hard to take pictures of!  But I've gotten a few and thought I'd share some with you!
 

 
They are so greedy though!!!!  I never realized how protective they were of their food supply!  The first one that arrives in the morning is the dominant one the rest of the day.  Chasing off anyone who would dare try to drink out of either one!  They get so busy protecting that they hardly drink any themselves!  :D
